Position Objective:

To play a key role in the development of new ingredients for the manufacture of bakery products. Conduct and accurately report bake lab testing, primarily as part of an NPD project team but also to support Quality Assurance, Manufacturing, Technical Service and Marketing in order to maximize profit and ensure a competitive advantage.

Key Result Areas:

Performance Standards

Bake Lab

Follow lab procedures, as defined.

Conduct all activities in a safe manner, wear PPE as necessary.

Monitor lab equipment on a daily basis and report any issues.

Accurately document all results and laboratory conditions while conducting tests.

Maintain the lab in a clean and orderly manner.

Notify line management when ingredients are needed and assist with ordering when possible.

Assist in the development of Bake Lab test methodology, which is reliable and representative of industry standards.

Assist to ensure lab meets regulatory requirements (i.e. OSHA, etc.).

Assist to ensure lab equipment is operational.

Assist with special projects, when requested.


Support the NPD process by investigating the functionality of existing and new ingredients in various bakery product applications, assessing the effect and suitability of the ingredients for use in such applications under instruction of the project manager.

Assess the performance of competitor products, as required.

Carry-out testing to support the successful reformulation of existing products.

Technical Service

Conduct special projects, as assigned, in a timely manner, including documentation of results.

Prepare application samples for customer presentation, as required.

Test alternative raw materials to improve quality and/or reduce cost in support of the procurement team.

Carry-out testing to support QA and manufacturing in the investigation of complaints and to support quality improvement initiatives.

Expense Control

Actively participate in proper lab maintenance to avoid equipment breakdown.


Complete project result documentations and distribute to appropriate parties.

Record the time assigned to each project in the database.

AIB Training, High School diploma or HS equivalent experience.

PC, word processing and spreadsheet skills.

Demonstrated ability to work effectively in a customer-focused environment.


Associate's Degree in Bakery Science, Chemistry, Food Science.

Experience in experimental execution.

Good analytical, organizational and prioritizing skills.

Good planning, organization and problem-solving skills. Ability to manage multiple tasks.

The employee frequently is required to reach with hands and arms. The employee is occasionally required to sit; climb or balance; and stoop, kneel, crouch or crawl.

The employee must regularly lift and/or move up to 10 pounds and frequently lift and/or move up to 50 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and the ability to adjust focus.

While performing the duties of this job, the employee is sometimes exposed to airborne particles and chemicals. The employee occasionally works near moving mechanical parts.
